What do I Need to Make Summer Sausage and Snack Sticks?

Here's what you need to get started making hamburger, summer sausage, bulk sausage or snack sticks. At the minimum, you're going to need a grinder.

 

Making the Basics

Your grinder can actually stuff tubes to make hamburger. It's up to the person whether they want to mix their hamburger with beef fat or not; you can make it 80/20, you can make it 90/10, or you can run it straight lean venison. All depending on the person.

 

The grinder can also stuff fibrous casings to make summer sausage. When you're making summer sausage, rule of thumb is you're mixing your venison with pork. Again, up to the person whether they want to run it 50/50, 25/75, completely up to the person's taste.

 

To make snack sticks, like breakfast style links, this grinder is capable of stuffing natural casing to make snack links or breakfast links.

 

At the end of the day, a true vertical stuffer will make this process easier. But these particular LEM grinders can do it all, if need be.
