When cooking prime rib roast, you have to start with a great cut. But, learning the difference between bone in and bone out when choosing a prime rib roast is important. Watch and learn as we’ve partnered with Discount Meats to explain.

How's it going, everybody? I'm Garet with Discount Meats. Today, we're here with North 40 and we are going to be going over the difference between bone-in and boneless primes, and also just how to order them. So right here, we have the boneless prime. Comparing it to the bone-in one, fairly similar. The only difference is this one has a bone. The benefits of the bone-in versus the boneless. My personal favorite is the bone-in. The bone adds just a little more flavor, and around the bone area, it's more moist when you're cooking it. But it is a little harder to cook. The boneless one, if it's your first time or you're just getting into it, it's a little easier to cook because you don't have that extra thickness with the bone and it just seems to cook quicker. But either way, they're both great. You won't have any issues with either one.

How to Choose Prime Rib Roast?

The boneless one, we usually trim the tail fat right here. Trim that off so you don't have to be worrying about having too much fat on there, but there's still enough to make it nice and juicy. And that's basically done just like that. You can order them. For the boneless ones, we sell them in a three pound all the way up to 20 pounds. The bone-in ones, you have to get a little bigger. The five pound is our smallest that we can do. You start getting less than five pounds, it gets tough for us to tie the bones back on, which I'll get into that right now. The bone-in ones, we take it and we lift these bones, so these rib bones off, so you don't have to worry about slicing around them when you're home. We'll go here and we'll just life the entire bone off of there and set it right back down. And we'll get our butcher twine. Set that up here.

Another benefit to the bone-in prime is the ribs, they're not going to waste. There's meat in between each one, and quite frankly, they're amazing. So another question that we have all the time down here is, how much do I order? How much am I going to need? If you know how many people you're going to feed, we can give you a rough estimate. You usually figure about a pound a person, but it varies. A kid's not going to eat as much as an adult, you've got to figure that in. And then, also, when you cook it, it reduces down a little bit and you do lose a little weight, but not a ton. So you've got to consider that. And plus, there's nothing wrong with leftover. So if you like leftovers, they make a great sandwich.
