What Cuts do I Need to Make for a Tomahawk Steak?

What's going on guys. My name's Garet. I'm from Discount Meats. I'm here with North 40 today. I'll be showing you how to turn this bad boy here into a Tomahawk steak. This is called the wing rib. It's the midsection of a cow. You can get rib-eyes, rib steaks, cowboy steaks, but we're going to be focusing on the Tomahawk steak today. First thing I'm going to do is cut this bottom section off right here. That way you get your standard rib bones coming off of there. On the backside here you got to peel this membrane off it here. Next thing you want to go ahead and do is trim off these plate bones here. All right, so now that we've got those plate bones off the back there, we're going to go ahead and French these bones out.So you come in between each bone here, come up about, I don't know, 10 inches there and then just peel each rib out, each individual rib. All this trim that we peel out of each section here goes right into hamburger. We don't really waste anything around here. It either goes into burger or gets sold as a steak. All right, now that we got that Frenched out, should be able to come in here with just a knife. Come in between each individual rib bone here, all the way down through it.

Just like that you got a Tomahawk steak. So most people go with this Tomahawk steak. It's really just a for looks steak. It really has a unique presentation when you're cooking it on the grill.
