Why Should I Choose Baby Back Ribs?

There's three styles of ribs that come from pork. There is
spare rib, baby back rib, and country style ribs. So starting out, we'll go
with the actual baby back ribs. They're smaller, meatier. With your baby back
ribs, they don't have the fat content as spare ribs do so they don't have that
rendering of the fat to keep that moist. So they will dry out if you tend to
cook them longer, faster. So something to keep an eye on when you do smoke
them. They actually come out of this section right here, where you get pork
chops from, your center cut pork chops.

What Perks do Spare Ribs Have?

Then you have spare ribs. They come actually from more of
the belly section where you kind of get your bacon at. there's a little more
fat to them. You get St. Louis ribs out of them. They peel this membrane off
and lift this skirt and cut them up individually. And that would be St. Louis
spare ribs.

When do I Select Country Style Ribs?

And then that gets to your country style ribs, which actually comes off the shoulder portion of the loin. Here's the tenderloin, the back half. So it's just the section right up here.
