Let the Meat Rest

One of the very important things you want to do right after you take your meat out of your grill or your smoker is you want to let it rest and hit its internal temperature from there. Most meats will rise in an additional five degrees after you let it rest. This is a really important process to smoking and grilling. What I like to do is I'll usually take my meat out and wrap it in foil. I like to do a pretty tight foil wrap on it, just to let those temperatures keep rising, and then maintain all those juices inside there as well.

Secret Tip, Use a Cooler

A little secret that I like to use is I like to use a cooler. Any type of cooler will work just fine. This does the opposite effect of it does when it's cooling. So it's actually going to keep the heat inside and let those internal meat hit its temperature. But it's also going to let it cool down significantly slower until it's ready for your meal.
